Plant Based Smash Lentil Tacos by By Nature Food
Try this delicious recipe from By Nature Food! 
1 onion, diced
2-4 cloves garlic, minced
1 tbsp all-purpose seasoning
1 tsp smoked paprika
1 tsp cumin
1 tsp coriander powder
1 tsp chilli flakes
3-4 tsp olive oil (optional)
1 cup lentils, washed, rinsed and drained. (green, brown or black lentils work)
1 can plum tomatoes
1 1/2 cups water
1-2 tbsp pepper sauce 
1 ½ cups shredded vegan cheese
1 pack small to medium-sized tortilla wraps
Pico de Gallo Salsa:
2 tomatoes, diced
½ red onion, diced
Handful, Cilantro/Coriander, rough chop
1 lime, juiced
1 jalapeno, diced (optional)
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
  2. Add the all-purpose seasoning, smoked paprika, cumin, coriander powder, and chili flakes to the pot. Stir and cook for another minute to toast the spices.
  3. Add the washed and drained lentils to the pot, along with the can of plum tomatoes and water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the lentils are tender and most of the liquid has been absorbed. Stir occasionally.
  4. While the lentils are cooking, prepare the pico de gallo. In a bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and jalapeno (if using). Mix well and set aside.
  5. Once the lentils are cooked, use a potato masher or the back of a spoon to partially mash them, creating a chunky texture. If the mixture is too dry, add a little water. If it's too wet, continue cooking until it reaches your desired consistency.
  6. Warm the tortillas according to package instructions.
  7. To assemble, spread a portion of the lentil mixture onto each tortilla. Top with shredded vegan cheese and a spoonful of pico de gallo.
  8. Finish with a generous drizzle of Smilin' Island Foods Mango Pineapple Pepper Sauce.
  9. Fold or roll the tacos and serve immediately.
