Ingredients:
1 onion, diced
2-4 cloves garlic, minced
1 tbsp all-purpose seasoning
1 tsp smoked paprika
1 tsp cumin
1 tsp coriander powder
1 tsp chilli flakes
3-4 tsp olive oil (optional)
1 cup lentils, washed, rinsed and drained. (green, brown or black lentils work)
1 can plum tomatoes
1 1/2 cups water
1-2 tbsp pepper sauce
1 ½ cups shredded vegan cheese

1 pack small to medium-sized tortilla wraps
Pico de Gallo Salsa:
2 tomatoes, diced
½ red onion, diced
Handful, Cilantro/Coriander, rough chop
1 lime, juiced
1 jalapeno, diced (optional)

Handful, Cilantro/Coriander, rough chop
1 lime, juiced
1 jalapeno, diced (optional)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
- Add the all-purpose seasoning, smoked paprika, cumin, coriander powder, and chili flakes to the pot. Stir and cook for another minute to toast the spices.
- Add the washed and drained lentils to the pot, along with the can of plum tomatoes and water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the lentils are tender and most of the liquid has been absorbed. Stir occasionally.
- While the lentils are cooking, prepare the pico de gallo. In a bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and jalapeno (if using). Mix well and set aside.
- Once the lentils are cooked, use a potato masher or the back of a spoon to partially mash them, creating a chunky texture. If the mixture is too dry, add a little water. If it's too wet, continue cooking until it reaches your desired consistency.
- Warm the tortillas according to package instructions.
- To assemble, spread a portion of the lentil mixture onto each tortilla. Top with shredded vegan cheese and a spoonful of pico de gallo.
- Finish with a generous drizzle of Smilin' Island Foods Mango Pineapple Pepper Sauce.
- Fold or roll the tacos and serve immediately.
