Sweet Chili Kebab Sandwich (Vegan)
Makes 4 servings
MACROS per serving: 31g protein/11g carbs/1g fat
Ingredients:
150g chickpeas
150ml of veg stock
2-3 tbsp Smilin Island "Mama's Own" pepper sauce
120g vital wheat gluten
20g nutritional yeast (optional)
1 tsp smoked paprika
1 tsp all purpose seasoning
1 tsp garlic pepper
1 tbsp cumin powder
100ml pineapple mango sauce
Instructions:
1. Preheat the oven to 350°F, line a baking dish with aluminium foil, and lightly spray it with non-stick spray.
2. In a blender, add the chickpeas, and water. Blend until you get a smooth batter consistency.(remove chickpea skins for a smoother consistency.
3. In a large mixing bowl, add the vital wheat gluten, nutritional yeast, and seasoning.
4. Fold in the wet ingredients with a spatula. Once you have folded in all of the wet ingredients, knead the mixture with your hands.
5. Using your hands, form into 2 logs cover with oil place on a sheet of foil and cover with another sheet of foil. Add something to press it down and place in the oven.

6. After 20 minutes flip the meat pieces and place them back in the oven for a final 25 minutes.
7. Finally allow to cool 5 mins and slice into strips 8. Cover with your favourite sauce. Serve, and enjoy
